Every gardener I know has a boatload of zucchini throughout the summer. Go ahead, and give everyone your extras, but don’t forget to try it in different ways: make zucchini bread, muffins, fry them, sautee them, bake them, and freeze some for later. Baked zucchini is easy to make and so yummy! Try some of these baked zucchini recipes.
This year we planted 6 zucchini plants: 3 black beauty and 3 golden ones. There’s only 4 of us, so as you can see, we love our zukes! I’ll definitely have to freeze some later in the season after we’ve had our fill (I love my frozen zucchini shredded, ready to use in baking).

Utensils needed to make these baked zucchini recipes
If you have a sheet pan, you can make baked zucchini. Of course, it will need to be a simple recipe of just zucchini, oil, and seasonings. But if you want to make some of the above recipes, you’ll need a few more things. Here’s a quick list:
- a good vegetable knife
- vegetable peeler – try a multifunctional one like this trio
- zucchini corer in case you want to make stuffed zucchini
- a chopper/shredder/slicer – this one is great if you prefer manual. I personally prefer a food processor to make my life easier (where possible, of course)
- silicone spatula to turn your zucchinis if you make chips
- bakeware – I love this baking set because it has everything you need: baking sheet, roasting, cake, and muffin pans
- a few mixing bowls for preparing the mix for sweets
- silicone muffin liners – these are so cute!
