Delicious Zucchini Recipes to Use Up Your Abundant Harvest

Is your garden overflowing with zucchini and squash? Mine is, but that only makes me happy, because I have all these delicious zucchini recipes I want to try. I’ve already experimented with some recipes over the years, and a few emerged as favorites, but I’m always up for discovering more ways to enjoy this hard worker from my garden.

We have 3 definite winners in our home: fried zucchini with garlic mayonnaise, zucchini cake, and the spiralized zucchini fries below.  YUM!

And, of course, I learned how to freeze zucchini in several ways and enjoy it throughout the year.

I’m bringing you lots of delicious recipes you can make with the abundance of zucchini from your garden (or the neighbor’s garden) from breakfast to lunch and dinner, and even dessert and snacks: it’s all included! Check out this list of baked zucchini recipes, or, if you like your zucchini better fried, here are 16 fried zucchini recipes.

Zucchini Breakfast Recipes- 1. Gluten-free Zucchini Bread with Maple Oat Crumble

This recipe is a delicious, healthy zucchini bread for any day. It’s great for breakfast or a quick evening snack with milk. You can experiment with different types of flour to see what works best for you, too.

This zucchini noodle salad looks so good, you’ll start eating with your eyes first! This recipe goes well with my oven-roasted red peppers. YUM! This recipe just shows how versatile zucchini is.
